John Welton from Cambridge Quality Meats gave an impressive and fascinating demonstration and answered all our questions about what was what. Now we know why the front of a cow is less tender than the back (and hence the front cuts are cheaper though excellent for many dishes). We also found out what a feather steak is and lots more. John gave us lots of ideas of what to do with cheap cuts and what to ask for (which you won't even find in a supermarket) and though I can't remember them all I know what to do -- the next time I want a piece of meat I'll detour to my local butcher and ask for advice.

John jointed half a cow, half a pig and a whole lamb* for us.
