Meat - using every bit

Meat - using every bit!

Thursday 31st March 10.30-12.30: Arbury Community Centre, Campkin Road, CB4 2LD
Entrance free.

This event is organised by Kings Hedges Neighbourhood Partnership and North Cambridge Recycling Champions. It is supported by Love Food Hate Waste.

John Welton from Cambridge Quality Meats gave an impressive and fascinating demonstration and answered all our questions about what was what. Now we know why the front of a cow is less tender than the back (and hence the front cuts are cheaper though excellent for many dishes). We also found out what a feather steak is and lots more. John gave us lots of ideas of what to do with cheap cuts and what to ask for (which you won't even find in a supermarket) and though I can't remember them all I know what to do -- the next time I want a piece of meat I'll detour to my local butcher and ask for advice.

John jointed half a cow, half a pig and a whole lamb* for us.

* If you are very squeamish you might find this show a bit raw.
